What could be better than celebrating the first day of Autumn with a cozy and hearty soup? This recipe is really just a variation of the many lentil soup recipes that I have read. I included my favorite vegetables, but anything is good in this soup.
Ingredients:
1 lb package of lentils
1 carton chicken stock
1 yellow onion, diced
1 green bell pepper, diced
2 carrots, sliced
2 stalks of celery, diced
1 can of roasted tomatoes
1 package of frozen squash
1 tbsp fresh garlic, minced
½ stick butter
Fresh Basil, chopped
Salt and Pepper to taste
Begin by filling a big pot about half way with water. Add
lentils and cook for about 15 minutes. Drain and rinse, and add back to pot.
Add all other ingredients and cook until vegetables are tender. Serve with
cheesy bread and enjoy a happy fall evening!
